She is more likely to search or run off with your wallet .
So lock your IDs, monies and valuables in the room safe.
However, incase the room safe is not secure enough ask reception to keep your valuables in their office safe.
Always use cash rather than credit cards for any payments. This eliminates the chance of her memorising your details and selling them to some syndicate on the dark web.
If you do not wish her to know your real name remember not to let her take any photos of you.
She could easily search your image online unless you have no online presence.
Better still crack the lense of her mobile phone to prevent her taking your photos without your knowledge.
Also there is the chance she may get hold of your DNA (e.g. hair) or finger prints on a glass.
You could wear gloves and shave your head and all your body hair.
