You need to start staying in better hotels!  I have been going to HK for over 25 years and my favorite HK hotels for harbor views are:

TST:
Sheraton, Intercontinental, Marco Polo, The Peninsula (great but not cheap!), and YMCA Salisbury (cheap). The old Renaissance in Wan Chai also had nice views from the top floors, but I think that hotel was closed (or perhaps merged into the Intercontinental which is/was next door).

Central/WanChai
Renaissance Harbour View, Grand Hyatt, Four Seasons (not cheap, and also not as good as the other 2). I also stayed in a boutique hotel once up off Hollywood Road with a great view, but I forget the name of the hotel right now. (OLD AGE SUCKS!)

Some of my favorite memories include the harbor views from my bed in these hotels -- especially the Renaissance and Marco Polo. The very best view might be from the upper floors of the Marco Polo in TST. I stayed there quite a few times and once had a terrific suite looking over the harbor. I remember looking over a German cruise ship in port and watching an Octoberfest party while I was fucking an Australian-Chinese working girl. TRULY amazing!  

BTW, it's also fun to bring a bar girl home from a Wan Chai bar, and then see the look on her face when she sees the view from the Renaissance. (I always lie and initially tell them I'm staying at the Novetel or some other cheaper WC hotel when I'm negotiating their ST and LT rates before we start walking to my hotel.)

Don't forget the new Ritz. It's got a great view from the corner rooms and suites, and even have a telescope in the rooms. You get to see the whole harbor from above so it's from a different vantage point that something like the IC. And the quality of the rooms and service puts it just behind Upper House and Four Seasons and ahead of pretty much everything else.
