Something of this can be explained by personality. Generally, it is very difficult for the Chinese to deal with criticism of any kind in a cool rational manner. Everything quickly becomes personal, involves face, and becomes very emotional.
Most Westerners don't know shit about China, and Chinese living abroad have to deal with all sorts of stupid stereotypes and gross inaccuracies. A few mths of that can cause even the most reasonable person to raise the barricades.
The Chinese are a very proud people and for 200 years the West and Japan have shat on China. So even if, in private, all Mainland Chinese will gripe about things back home, they don't want to hear it from foreigners.
And almost everything said about China and the Chinese in the western press is negative and one-sided, and that also pisses the Chinese off.
So when the Chinese react to criticism about China, they are not defending the CCP, but speaking up for the Chinese people.
