There are quite a number of shops that sell motorcycle gear, Mong Kok Kwong Wah Street and Kowloon City are some I can think of. You will be able to find some protective gear, hardware, etc. But if you are just looking for cameras, maybe you can consider going to some tech/comp shops in MK or Wanchai and you should be able to find brand-less or branded but decent quality ones. Alteratively, you can design your own setup, create your own mount, or do whatever. I suggest you do some research into this if you havent already. Or, just go to Oregon Scientific and get their new model, and I believe it mounts onto full face moto helmets.
Yes, you are correct. You can get a simcard that has internet access but would be through 3G or HSDPA service. Some cards may include WIFI service for an additional fee. But you can access it only if your device has WIFI capabilities. Although HK, is WIFI in many locations this does not mean you can get continual service by switching through access points, especially if you were to go at the speed of a motor vehicle. I don't believe anywhere in this world has this sort of technology yet, although it is certainly possible. Software practically hasnt been worked out yet. However, 3g or HSDPA can give you continual service to access maps. Assisted GPS should not be a problem. HK is quite good in this respect.
P.S. I hope you have a bike in HK, because you can't rent one.
