Sunday brunch buffet at The Conrad. It's pricey @ around $600. Be prepared, it's an event. You'll be eating for 4 hours. The quality of food there will easily make up for the price tag. If you were to sample the kind of food served there a la carte at another restaurant, the bill can easily run to more than a grand.

OMG OMG OMG!!! which one Shangri-La? the one in Kowloon, or the one in Central?? I'm not familiar with the area so i'm not sure where Admiralty is... it'd be awesome if it was the on e in kowloon, cuz it's like a 5 min walk from my hotel

i dont think they are fake lobsters.. i believe what your refering to is the Crayfish which is more expensive than a lobster and alot smaller too..
Very delicious too... but china doesnt really have a fresh supply of lobsters... it mostly comes from Japan and when they do serve lobster, it's sashimi style (raw)

the Shangri-La one mentioned above at Admirality is the Hong Kong Island one.

However, the one at the Shangri-La in Kowloon is just as good.  Called Cafe Kool.

I have been quite a few times and everytime I got they either have lobster or crab and then there is always the selection of shrimp, sashimi and porsciutto ham.  If you want to make sure that they have lobster on the menu for the day, ask them when you make your reservation.  I highly recommend making a reservation because they are very busy.  The location that I always go to is the hong kong location, never been to the kowloon location so dont know much about it.

If you're looking for a quality buffet I recommend Congress (http://www.hkcec.com.hk/english/restaurants/rest_congress.php)

It's at the HK Convention Center. Absolutely best buffet I've ever had.

If you really perfer seafood, I guess you should go to somewhere close to sea. Australia or Japan is really a nice place for seafood (And also for wg)

If you want Chinese style, you could go to one of many Chinese restaurants and ask for one there.  They swim around in the fish tank until ordered. Though this is not all you can eat, as you were asking, but if you order 2-3, you should be pretty full.

Cantonese diners really appreciate the freshest possible seafood.  That is why alot of restaurants like to show off their tanks containing their lively, swimming fish.  

Once when I was in Northern China, I was shopping in the local wet market and saw a fish floating upside in a container for sale.  I asked the vendor if he had fresh fish.  He said sure he did and pointed at the upside down fish.  I said that fish looked dead.  He replied with a straight, serious demeanor, 'the fish is sleeping'.  

I walked away.
