How to rate “service”?

I am seeing some overlap with skills, am I correct? Or should it focus on peripheral stuff like towels, room hygiene, general friendliness, perhaps ease of booking, etc.?

It's however you want to rate it. I think of it as a combination of skill and general customer service. Like I'll rate them heavily based on how they performed but I'll also consider things like adding in teases in the shower, whether or not the room is clean, offering me water, helping me get dressed, taking requests, offering a massage, whether or not they watch the clock, etc.
