If you know of a hotel in your neighborhood, you may be able to join one on a month by month basis. Generally hotel gyms will cost more than the gym chains but some hotels include a swimming pool in the membership.

If you want the full gym with gym classes like the gym chains, ie California, Physical, Pure Fitness, ie, etc, many of these gyms have short-term 3 month packages. These 3 month packages are targeted at expats coming to hk for work projects. You will have to ask them about these as they are not advertised and you will have to bring your passport. I did ask about a Physical one 3 month package recently and it costs about $2000 or so (included a gym joining fee too).
