Best Noodle House in HK/Macau, where can i find them?

Since i'm preparing for a  trip to HK/Macua come Sept, i would like to know absolutely where the Best Noodles Houses in Hk/Macau are located.
Any particular famous Noodle House that i shouldn't miss out while in HK/Macau?

FYI, here in the Philippines, the best Noodle House in my opinion is MASUKI Noodle House w/c is located in Chinatown Manila.
One serving of its BIG BOWL of Chicken and Roast Pork Noodles is 110 pesos (equivalent to 20 HK$). They also serve delicious SIOMAI w/c cost 30 pesos per piece (about 5 HK$).
Actually what makes the noodles really delicious is the special sauce that comes with every order.

Mak Un Kee on Wellington in Central!  I ate there last year, and thought that they were some of the best!  I had this bowl with these shrimp dumplings in noodle soup...amazng!!

Hate to break it to you bro - but lets face it, you being Filipino/from the Philippines with your own particular taste and preference, are NOT going to have the same taste/preference as us "locals."

Your "special sauce?" Replete with your Filipino Lime?  You ain't gonna find it in Hong Kong/Macau!!

it's like the stereotypical American Mid-westerner getting all disappointed when they come to Hong Kong and find that there's no decent Chicken Chow Mein! Or Moo Goo Gai Pan....whatever that is!!

I think it's really hard to say BEST because SEAJ is right, personal taste and the flavors you grow up with play such a bit part of what you deem as good.

i.e. Thai food, quality-wise, in HK is good, but overall a bit too sweet for me.

I'm going to guess that "SIOMAI" is Siu Mai.  So for dimsum and if you are travelling alone, go to "tim ho wan" in Mong Kok.  1star Michelin and a freaking long wait to get inside.  I personally think it's good, but not worth the wait, so if you are a single person travelling...10-20 mins and you are in.  if not...1-1.5 hour depending on time of day and how many in your party.  Maybe things are better now since they opened another branch in SSP
