I see you're from New York. Since both HK and NY are former British Colonies you should find plenty of familiar cues to help you find the way around. Street names. Building numbers. English alphabet. Arabic numerals. Etc.
But yes, if you want 100% certainty you would do well to print out some of your top target addresses on a map before coming (a map is innocent enough to carry with you, right?). I find it a bit easier to handle, and stands out less, than walking down the street gazing at a PDA ...
Certainly yes, you can use Google Maps while you are here. It can work with GPS, but is as likely to show an incorrect current location as a correct one, so best just to use it as a static map. Your final 100 yards or so will need to be navigated using your built-in Eyeball Navigation System.
BTW if you are using roaming, beware of GPRS data charges: when you are roaming they tend to be HUGE. Either that or buy a local sim and make sure the local sim includes data.
