I find that speaking a little bit of Mando will serve you very well (Thai too but usually Thai girls in HK can speak some English). My own experience from 0 to beginner level showed me that you can get a much better experience. Even if it's just a couple of sentences you picked from a book, there's even apps now (look for Chinese Pro on google play store). And that makes sense! That means that you treat them as human and not just a piece of meat you're going to fuck.
So once you know a bit of Mando it's easy with a pinyin input and google translate to communicate to book an appointment. My messages are short but go to the point.
Hi XXXX do you work today? Today 17:00 OK?
你好XXXX你今天工作吗？今天17:00 OK?
