1) From Shun Tak in Hong Kong, there really is no "last ferry". They run 24 hours. Check out the Turbojet web site for actual times. But in general, you show up, and wait for the next ferry. They run very frequently from 6am until midnight, then every hour or hour and a half. But there's no "last one".

2) Check the Macau section for recent discussion on this issue. In short: no more stamps in either HK or Macau. It's all done with small pieces of paper.

Casino ships: I can't help you much with these. I think they leave from Ocean Terminal on the Kowloon side, but I don't know the details.
