Mongering Phone and SIMS

Most of us, I think, carry a separate hobby phone.  Nearly all of us get a local SIM chip when we go to a different country, as PO's won't return international calls (although I've found them to willingly return international texts via SMS).

One can protect one's hobby phone by:

1. Never taking it home with you!
2. Access code
3. Software to hide your internet numbers/callers if you have them

However, if you take the SIM chip out of the phone and put it into another phone with no password protection, can the names and numbers (and messages) on that SIM then be read?
