The ferry packages don't seem to be available at HKIA. However, in the context of a week's mongering (you say 3 days in Macau, then a few more days in HK), the cost savings will likely not be enough to make a meaningful difference.

One thing to bear in mind though, is that ferry services from HKIA do not run 24 hours per day, whereas those from the ferry terminal on Hong Kong Island do run 24 hours per day. I think the last ferry from HKIA is something like 22:30. So, your arrival time will have some bearing on your plans.

For what it's worth, catching a ferry at HKIA is remarkably easy. Get off your plane, follow the signs to the ferry terminal (do not go through immigration), buy ticket, get on. The ride is shorter from HKIA than from HK or Kowloon, which is another slight benefit.
