There will always be girls around, even during CNY. Don't expect good quality and quantity. For 3 weeks afterwards in Feb, I would guess half compared to other times. It usually takes about 30 days to be back to normal. Most girls are freelace. There is no contract but I don't know about Macau. Most girls come and go when they want to work.
Don't expect other Nationalities to go home for CNY. Most are too far away from home or they don't celebrate CNY. Other nationalities are like Philippines, Caucasians or Thais.
ii) Will CP or Macau be closer to "full strength"?
In the past for BBS in CP, they charged more during CNY. There would be far too many punters ( monger ) around and NOT enough girls. It was Supply and Demand. Normally it was 200 rmb. During CNY they would raise the prices for 2-3 weeks. They raised it to 250 in the past but it drop back after CNY. For last year 2011, after raising the price to 250, it stuck.
