Although this may not be the "best" in HK, a buddy took me to the restaurant at the Luk Kwok Hotel in Wan Chai and they served some tasty dishes.

I'm not Chinese so I'm obviously no expert, but I'll throw in my 2 cents anyway. Some of the best food I've had in HK have been at dai pai dong's such as the ones in Temple Street. Apart from the food, it's fun to see a different side of Hong Kong to the glitzy hotels and fancy restaurants. But unless you know what you're doing and speak the language, you'll need a local to help you.

I'll start with the venerable Super Star Restaurant at 83 Nathan Road in Tsimshatsui.  Pictures of so many HK superstars adorn the walls, and their custard bun creations are pretty innovative.  Chao Inn on the 10th floor of the 1 Canton Road building is excellent, and has tremendous views.

Two places that have good reviews are 添好運點心專門店 Tim Ho Wan the Dim-Sum Specialists in Mongkok and 鼎泰豐 Din Tai Fung in Tsimshatsui.

I forgot about this one. It's also recommended in many of the guidebooks.

The best dim sum restaurant should be Lung King Heen at four seasons hotel If no mistake it's the only 3 michelin Starred chinese restaurant.
it's quite expensive, I went there last year, it's at least hkd40 for a dim sum

otherwise you can go to Maxim restaurant (not the fast food), they are very good for dim sum and the price is correct

Maxim's in Central, Level 2 City Hall, 4 minute walk from Central MTR - very reliable, clean, kind of expensive, about 20USD per person.  Good dim-sum in my limited Western opinion.

Lung King Heen is an awesome place for dim sum.  I went and checked it out when I was in HK last year.

Also, Ding Tai Fung, is a taiwanese place.  More known for their dumplings.  If you are wanting traditional chinese dim sum this is not the place.  Mind you, Ding Tai Fung is a fantastic place to go to eat, one of my favorite places.

Yes, I was about to say that DTF is not a traditional dim sum establishment. I went to a DTF in Taipei and the dumplings are very good. They have a window showing a half dozen guys making them. The place is extremely busy and can take a while to secure a table.

I would recommend you go to Lin Heung Tea House on 160-164 Wellington Street, Central.  It is an old restaurant and has alot of character complete with cranky elderly staff.  Dim Sum here is pretty good, not the best.  You most likely will have to share a table with others as the place is always crowded and they don't take reservations.

I don't recommend Luk Yu Tea House which is listed in many guidebooks.  It has allowed fame to get to their heads and food is not up to local standards, but may be better than what you are used to.  This place is on 24 Stanley Street, Central.

Currently the best place for dim sum without the trappings of the typical dim sum restaurant is called Tim Ho Wan, the Dim Sum Specialists on 2-20 Kwong Wa Street, Mongkok.  This place is always super crowded.  You will have to wait almost 1 hour to get a seat.  The chef/owner of this place won (I think Michelin awards) awards at his previous job for his dim sum creations and afterwards went out on his own.  You should go on off-days to this place, avoid public holidays and weekends.

Although I have been living in Hong Kong, I have never tried the places you mentioned. I will make it a point to try them when time permits.

I have a (diverted) question. What about Fish N Chips? Where is a good place thats serve them? I mean, Hong Kong being a British Colony before, I am sure you can find good chippy restaurant.

I don't know about Ding Tai Fung in Taiwan, but the one in the US is just so-so, and it is expensive compare with other local restaurant.

That's what I have heard as well. They took the famous name and didn't really care about quality since they are apparently still very busy. I guess if you're in SoCal and can't get to Taiwan, it's one place to people's list to try out.

The one if Hong Kong was the first expansion outside of Taiwan and still has good quality. Not sure why the quality of the ones in the US are lower. Could it be having to use slightly different ingredients?
