not so sure how all these buildings work, which ones are the best for walking in on during the day?
Looking for some recommendations on places on HK island side, heard there are a few in causeway...
If you can, any thoughts on best floors in the buildings?

There is no such thing as the 'best' building or the 'best' floor or the 'best' girl ...

it all depends on what you want and what you're looking for ... girls change in buildings/floors, some might even
have day/night shifts !

I'm just looking for a building to look around where there are girls that'll accept foreigners without too much of a rip off

When you do walk ups listed in the 141 DB here I don't think there'll be too many instances where you'll get
ripped off. Most girls will accept foreigners, very few don't !
Suggest you go to buildings with lots of girls ... like New Lucky House in Jordan or Fuji in CWB so at least
yop can knock on more doors and choose the girl !

Go for Yuki. I didn't try her personally but I've read many great reports!

Relax - actually none of the buildings is good if they don't have a girl to your taste - check the DB first, pick some favourites, THEN go to the building.  

There isn't a building that's "bad" for walking in during the day time.  Most of the girls arrive in time for the lunch-time rush, and stay on for the happy-hour crowd.  Equally I don't know of any building that's worth going to much before 11am unless you phoned ahead to check your girl is on duty.  

As far as having a choice goes:-
Fuji is probably the biggest in Hong Kong Island, in CWB.
Or on the other side of Central: 123 Bonham Strand, 6 Mercer Rd, and Hing Loong buildings are good in Sheung Wan, plus the one in Peel St in Central proper.
Tin Hau has a hive in 119-125 Electric Rd

There are other buildings, and each has their own unique flavour and bros that prefer to go there.  You can get a sense of it by studying the db and reading the forum.  Well worth doing that if you're not sure what you want.  

But by far the best is to pick one and check it out.
